Evelyn is a skin-contact wine 100% Verdicchio.

Fermentation takes place on the skins for 30/40 days, followed by the aging on the lees for about 12 months.

The colour is marked, the aroma is persistent and rich thanks to the aromatic substances extracted. On the palate it is well balanced, with a full and smooth taste.

Varietal: 100% Verdicchio

Training methods: vertical trellis with vine density of 3,300 plants per acre

Yield: about 3.5 ton/acre

Harvest: by hand in small baskets, grapes selection

Winemaking: skin contact for 20 days, fermentation at controlled temperature, no clarified, unfiltered

Ageing: 12 months in stainless steel on the lees, followed by bottle aging 


Food pairings: pair well with a wide variety of meats, ranging from beef to fish. Pair excellently well with bold foods, including curry dishes, Moroccan cuisine, Ethiopian cuisine, Korean dishes and traditional Japanese cuisine.
